End of Day Enchiladas

Preheat oven to 400 degrees. In a skillet saute garlic and onion until brown. Mix rotisserie chicken, sauteed garlic and onion, cheese, chipotle chilis in a bowl. Grease your pan. Wrap mixture into corn tortillas and place fold down. Nestle as many as you can in one layer. Top with enchilada sauce until well saturated. Finish up with a layer of cheese. Bake covered for 20-25 minutes. Uncover and bake for another 5 to crisp up the cheese. Add cilantro and sour cream. Also fantastic as leftovers! Ingredients: Rotisserie Chicken, can Enchilada sauce, jar minced garlic, 1 white onion, can chipotle chilis in adobo sauce, 1 bunch cilantro, package corn tortillas, bag shredded Mexican cheese blend, container Sour cream, box Mexican Rice.
